To put this together, they’re the ones with a lot of wonderful ideas, I sit with them, we talk them over, and the purpose is to make sure that whatever the idea is it can actually be processed, and produced and that it can function. (Talks) Well, you start thinking about it right after the last ball. Oh yeah, you do think about it. It is about 8 or 9 months. It takes awhile to make it all come together.

Well the Governor’s ball is the top of the line, the great party, ball, that takes place right after the Oscar telecast. Approximately 1500 people are invited to attend the ball who have been in the audience for the last couple hours watching a fabulous show, they come in and get a chance to eat drink, mingle, see their friends and relax a little bit after sitting for awhile. It is a great evening. It is one of the highlights of Hollywood I would say, and certainly of the evening. It really caps it off.

Well one thing I will say about the Governor’s Ball is that throughout the years, its always evolving, always changing. And this year its just one more. And you know you pay attention to how your guests react and have just the feel of the evening and you pay attention to how you can make it better, special. A little different year in and year out. And this year we’re having this great, great wonderful…I really think it is going to work out great. I really do. It’s an elegant supper party that will allow the people, our guests, to walk around and to mingle and to see their friends. You know some folks haven’t seen each other since they made a movie and some folks haven’t been in the room in a few years so it is a special time and because there is a huge number of guests and a very big space, we work very hard to try to make it cosy and interesting and fun.

Yes, yes, the guests of the ball are folks who go to many premieres all over the world, fancy events, best restaurants in the world so there is a certain level of elegance and finesse and beauty that we need to bring to our gathering. To our ball. And a combination of Cheyrl Cicetto and the Sequoia production group are truly visionaries in terms of coming up with some wonderfully unique ideas and we all know everyone has great ideas but you have to see if they actually can be accomplished and whether they can actually benefit and serve you for whatever the situation ?, they do this and they do this brilliantly. With the help of Mark’s garden of flowers and many many fabulous artesians to help create the…all of the furniture, the ambiance, the lighting. The lighting is a major situation. Brilliant people she brings them all together to have visual accomplish…Wolfgang of course, the master chef he is and his fabulous team of people, they are really really wonderful. They are wonderful to work with. They bring the most luscious foods, a number of different styles and ways the food will be presented this year. Not just at this assigned seat where some body is going to come and put a plate in front of you, no many different levels and different ways that people will be satiated with the beautiful foods of Wolfgang and his folks. And then the special guest this year is Dave Goz, Jazz saxophone extraordinaire. I think the combination will make it truly extraordinary and different.

Well for me the most important thought to putting this menu together is when I found what should we do, what should we represent. So I said, Oscar goes organic, which is the most important thing to let people know we use organic vegetables, organic fruits, and also that we use humanely raised, treated animals. Chicken beef, whatever it is. Then we thought we have three great restaurants in town. We have Spago, we have Chinjuan and we have Cut. And I think so let’s take a few dishes that are popular, which people like and I like from each restaurant. So when you can see here, we have for example our snake river New York snakes which we are going to serve with Wasabi mashed potatoes. We are going to make some resoto with black truffles here. We are going to make some ravioli with pumpkin and white truffles. So it is going to be a little mixture of different cuisines just like our restaurants and I think one of our all time favorites is our Oscars here. We are going to have organic Oscars here for the first time. Organic Chocolate. It is made by Verona and its delicious. Better than any chocolate that I have ever tasted. We are going to give everyone two small Oscars to take home and this year is the first time we are going to make life sized Oscars. I’m just worried people are just going to take them and say, I won an Oscar. You know?

Well I think the biggest challenge is how are we going to serve every body in a short amount of time. And that is really the challenge at any dinner for that many people. That is why we have 14 kitchens in the dinning room so there won’t be no lines. We are going to have two hundred waiters passing out food. So it might be just a little bit of chicken salad, it might be a potato with cavier, it might be a little bead and goat cheese salad. It might be a little celery apple soup so we going to have all these dishes around in the dinning room so nobody is going to be hungry ever.

Well if somebody asks me what I would recommend, I would say you come up to the buffet, stop maybe with your lobster and our fish and pastry…?? And then finish with a little…come back again and have a little bit of the steam fried vegetables, there will be our snake river steak with wasabi potatoes. Now while you are mingling and drinking this lovely dom perion champagne, I would have a little smoke salmon Oscars which is really our standard already and maybe some of our appetizers you can see here like the tuna cons, the bruschettas, or little lobster tempora and then you sit down and eat a little bit and the eat a little more. I wouldn’t load of my plate. I would eat a little bit at a time. And you know we have great wine within the sterling. The wine comes from sterling and myself planted the cabarent special for the governor’s ball so we are going to have really special wine that nobody else can get anywhere.

Well first of all it was the academy the committee, Cheryl Boone Issacs and I decided to change the format of the ball and that really laid out the ground work. And once that was determined, I wanted to do a 360 from last year because it was a club. It was very cutting edge. You know the ten thousand tubes and all the color change. I didn’t want to go that way. Let’s go romantic and make everyone feel very very comfortable and at home and soothing so what I wanted to do is really flip the coin and go into a whole different palette. And then it started to getting tiered. I thought when do I feel absolutely transformed? Well in this sort of mediterrian Tuscany feel I do. The ivy, the sconces, the chandliers. So I wanted to create that environment for everyone. So once they got to the ball they just felt, I’m home.

Well you know the first you have to do is lay out your city. You have to actually lay it out on paper. This is my city, this is my burgalas, this is the stage. This works, that doesn’t work. Let’s move that here. This is how much seating I want. This is how much void space for people to move around. How many bars, buffets. You have to build the foundation. You have the theme in mind, you start creating the city. You build the walls, you garnish it with the florals and the greenery. You design furniture but you test furniture and make sure that someone in a gown with high heels feels comfortable can sit upright and do all that sort of testing. You make sure coffee tables hold drinks and food service and whatever. You really just take the mission state and who is coming and create the set. Then you have meetings with Wolfgang Puck team and they talk aobut their food service and how they are going to layer it. Then you talk to your team and other players and say what is entertainment, lets break it up. The feeling, we want entry music, do we want the dinner music as we are smuuzing. The transition music as we pick up and then the dancing, the latin hipper at the end. Think martini. To keep the energy high. So you just take all of that and you have to deal with all the vendors. You know who is laying the floor. Who is providing the sound. Who’s gots the lights. Who’s got the lighting design. Etc. etc. etc.

The wines are phenomenal. Sterling has come up with a custom blend. It is a red carpet reserve. And the gold standard chardoney, 2005 and 2003. Each bottle is numbered so the wine will only be consumed at the Governor’s ball but you can taste it today if you want to.
