We prepare a couple days in advance for this event. You know, a lot of shifts. A lot of people come in. It’s a lot of hard work, but it’s worth it.

Uh, you know, for the event today, we started getting ready on Thursday. We started getting everything together, we started preparing all the food. It takes a long time. (talks) Well we do everything from scratch. All the peppers we cut ourselves. Everything we make from scratch, so. You know everything you see here, you know it’s not ??, we make it in house, so that’s why it takes so long to make. That’s why we start a couple days in advance, and we’ve got like, you know about 5 people who are on shifts every day who are working for it.
